THE LATE TOM VALLE’S BEAN AND CHICHARONNE CHISPAS RECIPE FROM HIS THEN EL VALLE RESTAURANT

Story by Jess LeFebre – Tom Valle also showed me how to make his appetizer called “Bean & Chicharrone Chispas,” a favorite of this popular chef who then owned a restaurant on the south side called El Valle Restaurant.

Here is the simple recipe: Take one tostada shell and smear refried beans on it; add chicharrones; add melted cheddar cheese; & add the fennel spice (this is what makes this dish); then slice it in to nacho size pieces (you can add white onions, tomatillos, habaneros and other fixings as photographed here).

At this time I would like to add a little history about Tom Valle (Pueblo, Co. entrepreneur). I played in a band at a club called “The Anchor Lounge” on Main St. between 7th & 8th Streets. Tom Valle had a nightclub (just around the corner) called “The Arcadia,” where he brought in famous bands called “The Jefferson Airplane,” “Booker T & The MGs”, “Little Richard”, just to name a few.

I would walk around the corner with some members of the band (The Rudy Gutierrez Orchestra) that I was playing with, & listen to his entertainment/bands on my “breaks.” The “Arcadia” was later known as the “Hi-Fi” club, and was located upstairs. 

That’s where I came to know Tom Valle; he also shared many interesting stories about the famous bands that he brought in.”

Tom S. Valle was the owner and operator of the former El Valle Restaurant in Pueblo, that was located on Northern, passed away Dec. 28, 2017 at the age of 91.
