Jason and Christina Casados are a power couple in the local food truck business, serving from their fully equipped “restaurant on wheels,” some of Pueblo’s most mouth watering pub style food, unique twists on local favorites, and amazing hand held entrees.

The Snack Pack is not your average food truck, as can be seen from photos of some of their food items and from what’s on their menu. That they serve huge servings of quality food at great prices, has moved them from being one of Pueblo’s best kept secrets, to a destination that is no longer secret at all. The Snack Pack has been officially “discovered” and has expanded their hours and menu items accordingly!

The Casados’ food truck, managed by Robert Vigil, Chef Rob, serves breakfast, lunch and dinner regularly Monday through Friday at 303 S. Sante Fe Avenue. You’ll also see this business at events, festivals and other locations in the region. Or, you can have food delivered to your home through the Pueblo ToGo service (link below).

Breakfast items are served all day at Snack Pack, where you’ll choose from various Pueblo-style Mexican burritos and bowls: Breakfast Burritos (eggs, potatoes, cheese and your choice of protein, smothered in their signature green Chile), Bean & Chicharron (beans, pork rind, cheese and fresh Chile strips) or the ColoRadical Breakfast, (carne aside, eggs, potatoes, pico de Galla and avocado salsa), their ColoRadical Breakfast Bowl (potatoes, scrambled eggs, and traditional marinated carne asada topped with fresh pico de gallo & avocado salsa) or their Down Home Breakfast Bowl (potatoes, scrambled eggs, your choice of protein, smothered in in your choice of our signature red or green chile, with melted cheese).
For a more American style breakfast, try their Waffle Sandwich or Dirty South Sandwich.

If you are craving a juicy burger, try out their Pueblo “with a twist” burgers that include: Steel City Slopper (open faced bun with 1/2 pound of Angus with green Chile and cheese smothered over it), P-Town Cheese Steak (sautéed in onions, peppers, and mushrooms, topped with green Chile) and the Flaming Hot Jalapeno Cheesburger (with bacon, pepper jack, avocado salsa, onion ring, and Pueblo Roasted Green Chile Queso Blanco).

Take a look at this video of Robert Vigil, Chef Rob, cooking a Snack Pack burger, which he says, “I love a great burger and when I created these awesome burgers they totally appealed to what I would love to see on a half pound charbroiled angus beef patty served on a soft pretzel bun . I may be biased but there’s not a better burger in town.”

They also have American and Italian sandwiches including their: steakhouse burger, pineapple burger, meatball sub, buffalo chicken, roast beef & cheddar, pulled pork and a unique club sandwich.
Fresh cut house fries are served with all burgers and sandwiches, and you can also order wings, pub chips and onion rings on the side.

To provide a healthy, low-carb meal, the Casados have recently expanded their menu with more salads to choose from. Try their gourmet Lemon Pepper Chicken Salad or super filling Pepper Crusted Steak Salad.
Their Italian Entrees include huge portions of: Chicken Picatta, Chicken or Veggie Alfredo, Chicken Marsala, and Vegetable or Chicken Lasagne. If it’s Mexican food you desire they have speciality Chicken or Beef Enchelidas, Carne Asada Nachos, Pork & Avocado Burritos and Street Tacos.

They also serve seasonal specials that aren’t on their regular menu, so follow their Facebook page to keep up on this amazing food truck, with an ending note to this story from Jason Casados himself, who told me he created in part, focusing on Pueblo-Style food because, “Pueblo is such a great city I just love this place and want to do my part and hopefully bring some light into the city I was born and raised.”
