Story by Jenny Paulson – Red or green chile you are always asked when at a Mexican style restaurant right? When Pueblo newbies get asked this question they sometimes need a tutorial in the difference between red and green chile, that natives put on about everything. But at Romero’s Cafe and Catering you can order a meal where you don’t have to answer one or the other – it’s called their Enchiladas Christmas Style, which they just featured at their Facebook page with this photo.
This dish really has nothing to do with the holiday, but more so for the red and green colors of the chile sauces. Basically it’s an entree, served with beans and rice, smothered in both red and green locally grown chile, with cheese, tomatoes, lettuce an other fixings and a beautiful roasted green chile at the side of the plate.
If you haven’t been to Romero’s, this humble mom and pop restaurant, which opened in 1976, is the very Pueblo institution, that President Obama ate at when he was in Pueblo campaigning, to get a taste of
Pueblo’s great Mexican-American influenced food and local home grown green chile that “is” Pueblo.
Virginia and Mack Romero started the cafe and it was passed on to its now owner, Robert Romero (Mr. Chile), with management in the hands of Sheri Romero, who both take great pride in their reputation for their budget-priced quality Mexican and American cuisine.
Their Christmas Enchiladas is just one of their many specialty items. Others specialty meals include: Mr. Chile’s Burrito, Stuffed Sopapillas, Rancho Grande, Large and Small Combination Meals and the Works Burrito. They serve breakfast, lunch and dinner, and also do catering.
Romero’s is open seven days a week at 1323 Santa Fe Drive in Pueblo.
